Just as the holy month of ramadan arrived , so did the match-making of oriental and western desserts start. Kunafa in ramadan has been an Egyptian tradition since before i was born, and it has developed ever since. With the current NOLA craze and its super awesome cupcakes, new forms of kunafa with some pretty odd ingredients have evolved. Two of the most famous combinations are Kunafa Mango and Kunafa Nutella. I tasted both and completely fell in love. But then i thought, why not try making them at home? Sadly though, i couldn’t find one exact recipe that was clear and comprehensive. So i decided to make my own, in -of course- a cupcake form. So here is my version of the Kunafa Nutella and Kunafa Mango. Enjoy!
1/2 kilo Kunafa (phyllo dough)
250 grams butter, melted
1 tablespoon white sugar
3 packets whipping cream (the powder) 1 liter Cold heavy whipping cream (the one for desserts)
A handful of crushed pistachio (for garnish)
Syrup (to spread on Kunafa)
1 cup sugar
1 cup water
Juice of half a lemon
1 medium jar Nutella
2 mangoes, peeled and cut into
medium sized cubes
1- Syrup : in a deep pan, heat together sugar , water, and lemon juice. Stir for 10 minutes and let simmer until thickened. Set aside.
2-Cut Kunafa dough roughly or put into your food processor, add melted butter and sugar and stir very well. Make sure all the dough absorbs the butter.
3- Line your muffin tins with cupcake liners, and press a little bit of dough into each slot. A great tip here is to press it down with the bottom of a glass. ( for about 22 mini kunafas, you will need 44 slots)
4- Put the tins into an oven that’s heated at about 350° Fahrenheit (177° Celsius). Leave for about 5-7 minutes, depending on your oven.
5- Frequently check Kunafas because they burn really quickly, they are done once edges are golden brown and they are a little bit white in the center.
6- Immediately pour syrup (which has to be cooled) into Kunafas just as they get out of the oven.
7- Prepare your whipping cream: beat the whipping cream powder with the liquid. Beat until it reaches piping consistency.
8- Assemble a working station, for Kunafa Mango:
Put one layer of Kunafa, then about 3 pieces of mango cubes, pipe some cream, put another layer of kunafa, cream, and finally mango cubes. sprinkle a little bit of crushed pistachios on top.
Kunafa Nutella :
Put one layer of Kunafa, spread about 1 tablespoon of Nutella, pipe a little bit of cream, then add a second layer of Kunafa, followed by Nutella, and finally sprinkle a little bit of crushed pistachios on top.
9- Place in the fridge for a little bit so it can hold itself together and enjoy!
